Yesterday was a veggie frittata, three bean salad, pasta salad and BBQ chicken. So far today I've made a strawberry rhubarb pie with struesel topping, a spicy carrot salad with harissa, mint and feta & garlicy sesame broccoli salad. My goal is to cook this weekend so that lunches are already made for work next week.

A friend gave me some home cured tasso ham so I am making a gumbo for dinner tonight. My plan for tomorrow is to make a lot of healthy salads (quinoa/blackbean/avocado/tomato and carrot/harissa/feta/mint) for lunches next week.

I didn't have all of the ingredients on hand so I made some variations - no bulgar so I cooked the lentils with some red quinoa. Used some prepared red pepper/feta spread and used TJ's broccoli slaw instead of cabbage. Too lazy to make the tahini dip (didn't really need it anyway) so I added some lemon juice to the lentil/quinoa for some pep. Soooo good - I would gladly pack this in my lunch for a week!

My single mother with four kids often made us tuna casserole (tuna helper was too expensive!) - two cans of store brand cream of mushroom soup,a bagof egg noodles and a can of tuna fed a family of five. If she wanted to fancy it up, she'd dump in 1/4 of a bag of frozen peas.

I consider myself a pretty damn good coke with discerning taste - and I still make this once or twice a year. It reminds me of my youth and is still pretty tasty.

I'm lucky in that there are several farmer's markets near me (in Sacramento) that have local, organic beef and chicken (sadly, no pork) and freshly caught seafood of all types from the bay area. If I want something I can't get at the farmer's market - I go to the Orangevale Meat Market which is simply beyond fabulous. As a matter of fact I'm going there later today to order my turkey!
