I can't eat cranberries due to medications I take but I substituted chopped dates and thought this was incredible.

I have baked my own breads for around 35 years and this will be a firm favourite from now on.

I discovered Beast Heart. Always something I avoided because there are certain parts of an animal I couldn't bring myself to eat but as encouraged through a forum I frequent called 'Wildfood - foodies gone wild' (lovely foodie like minded people from the UK and some from the continent and even further afield). I have lights to try when I can pluck up the courage and nothing on this earth can get me to try tripe.

Also discovered using Pearl Barley instead of rice for many dishes - would much rather have a barley risotto than a rice one now.

Love the idea of the cramel sauce and I will be trying it with a basic short pastry that we use in the UK (without the cheese)

In the UK apple dumplings are always made with a short pastry, I prefer one with cheshire cheese in. The choice of adding cheese to pastry to go with apple has to be tried to be believed:

8oz plain flour
2oz lard
2oz vegetable shortening
pinch of salt
1oz grated strong Cheshire cheese (purely because it goes with the apple so well)
cold water to mix
beaten egg and brown sugar to coat before baking

Rub the dry ingredients together to form a mixture like breadcrumbs. Using very cold water mix to just bring together as a dough. Do not overwork it but place between two pieces of clingfilm to roll out thinly.
Then peel one side off place the stuffed apple in the centre and with the cling film still attached form it around the apple leaving a small hole at the top. Remove the cling film and decorate if wished brush with beaten egg and a sprinkling of brown sugar and bake in the oven.

I core the apples but not peel and stuff with home made mincemeat mixed with a little brown sugar, brandy or rum (for an adult version) and walnuts.

Serve with ice cream, thick cream or even better English vanilla custard.

Found this recipe when searching for a particluar pastie recipe containing squash. Many years ago swede was the main ingredient but now it is the trendier squahs that is used.
They are called Cornish Cow Pasties - because beef cows were scarce in Cornwall and usually only the dairy cows. The bulk of grazing land in Cornwall is really only good enough for sheep grazing not beef.
Therefore a cow pastie has to be vegetarian because you wouldn't eat your cow only milk it.

So alot more traditional than you origionally thought.
