The first thing I made in my Le Crouset was Julia Child's boeuf bourguignon. What a way to launch a new casserole. It's particularly fantastic for braising things that you brown on the stove and then stick in the oven. Love it.

You can get fantastic Ontario and Quebec cheeses at specialty shops in Toronto (my favourite is Nancy's Cheese at Spadina and Dupont) but you don't find a lot at farmers' markets. Montforte is one of the few, and the cheese is excellent. Ewenity Dairy is another you can find in markets. Sadly, another local cheesemaker Fifth Town just recently went out of business.

I was truffle hunting in Italy 15 years ago and it was pretty spectacular. Then we had the truffles "we" found at dinner. There aren't really any specific truffle recipes because you don't usually cook them. Italians frequently shave them onto pasta or egg dishes.

The smell is pungent and some find it repulsive, but the flavour is sublime.

Add oatmeal to chopped kale and a good strong chicken stock and lots of black pepper and make a traditional Scottish soup called Kale Brose. It's truly fantastic.

Try Veganomicon by Isa Chandra Moskowitz and Terry Hope Romero or two books by Bryant Terry, The Inspired Vegan and Vegan Soul Kitchen. All three have terrific recipes that work.

I've done this as well. I cooked the cauliflower in olive oil and then added garlic, lemon juice and capers and it was delicious.

I just finished pickling about 20 lbs of cucumbers. I got 20 jars of dill pickles and 11 jars of bread and butter pickles. Homemade all the way for me.

I just arrived home from the French Alps yesterday and we enjoyed many cheeses from the Savoie region - they use raw milk Reblochon on pizza! Had some magnificent Beaufort d'Alpage and some Comte as well. Also stayed in Ireland for a few days and had some wonderful Cashel Blue and Wensleydale.

I'm having 30 people for dinner next week, and I'm totally relaxed. I'm making a rather large buffet meal. Everything will be served at room temperature with nothing left to the last minute. I've made everything before and know exactly what to expect. It usually takes me about 2 days, sometimes 3 to get everything cooked. Make lots of lists, when to start cooking, which things can be made early etc. Then for party day start by making a list of arrival time and work backwards including everything you have to do like garnishing plates, setting the table, putting the bar together etc. I'm renting the plates and wine glasses (because I don't own enough), but that really helps with the clean-up as well. I'm actually quite looking forward to it.

My kids used to love to do this. You have to seal the pot once you have painted it, or else the paint will peel off when you water your plant.
