I'm looking for a hearty soup or stew to put in the slow cooker. Last week, we had a great beef barley mushroom soup. Now, I am ready for something else in the rotation. Any thoughts?

Wow! This looks awesome. My kids actually might eat this if I spin it as Pad Thai. That's not the norm.

I just made escarole and white bean soup by sauteeing garlic and escarole in olive oil. Then I add chicken broth (homemade or canned, whatevs) and can of cannelini beans. I put in some whole wheat pasta to entice the kids. Guess what? Everyone loved it!

My theory is that you expose them to a lot of food, put it all in front of them and not bother fighting about it. My daughter is 7 and her tastes expand every year. She lived on chicken fingers for about 2 years. Today, she eats kale, asparagus, cauliflower and a wide range of other veggies most kids won't touch. Her favorite dinner is marinated steak!

It's for curried butternut chickpea soup. Also threw in some pureed cauliflower for a full meal in one pot.
