Here in New Mexico chili is roasted and then frozen in the skin for longer storage. You just thaw what you want, pull off the stem end and slip the skins right off in one quick motion. Easy! I also tend to squeeze out most of the seeds after I take the stem end off, we're not able to handle all the heat these chili's have.

Yea, I'm not the only one confessing to bottled: grill mates montreal seasoning does it for us! On the grill of course, but if it's nasty outside, the broiler does ok.

I use my 10" cast iron skillet most, I guess. Then all my baking stoneware. Fresh bread!

I finally have my very first garden, dirt in the ground. I was so excited I couldn't choose what to grow. So, I started with peas, basil, cilantro, bell peppers, tomatoes, carrots, watermelon, pumpkin, cucumbers and mystery plants that turned out to be sunflowers! It seems I threw things in and didn't really 'plan' the arrangement, but I am learning. At least the peas got to grow up along the wall and the cilantro and chives are growing up in front. We won't talk about the sunflowers, they appeared out of nowhere.

Ok, I just posted the after of the upper cupboards. I admit, I completely forgot the timing when I signed up! We are leaving in a couple days for the next month so the cooking portion will have to happen either at my mother-in-laws mid week, or my mom's after next week. Sorry! I'll do what I can but will be without computer access for a couple weeks. This has been great so far anyway. I have moved stuff around and have all the essentials in my kitchen now, just have to work in the drawers and probably get rid of some never used items.

I understand the intent here, eat fresh, in-season, but I am also not throwing away food items. I am planning on not buying foods that have ingredients that read like a scientific report. I'm not so great at science!

I tried that Southwest Skillet Ragu last night, YUM! It made a lot though, so we may be finishing it off tonight. Otherwise, I have chicken quarters to fix somehow.
CWillows: we go on cross country car rides quite often, I like to bring some items too. Usually we have rice cakes and some trail mix divided into individual containers. This usually helps with stopping too much, but with 2 kids and a dog, we have to stop anyway! Have a safe trip!

Oh Oh!! I made those lemon pudding cakes too, this reminded me of that recipe also.
eaevansmd, I made mine in coffee cups the first time, no ramekins here either. Then I tried it in an 8" round cake pan. That worked out ok, I should have just inverted it like here!
I'm going to try this recipe also, love those lemons!
