Great suggestions but you have to be careful with 2 of them. #1 - 1/2 cup of cottage cheese can have as much as 450mg of sodium - daily total recommended is under 2300mg. #2 - the protein content in deli meat varies widely and sodium contents can be very high. You have to really read the labels.

I do this quite often as well. One of my favourite single layer cakes to make was on posted here last year - the vegan sticky orange cake. Martha Stewart has a recipe with a bechamel sauce and you add 8 oz gruyere and 15 oz cheddar. Baked in the oven with bread crumbs that have some of the cheese mixed in - absolutely to die for!

I use the ball jars for lots of lunch items and leftovers. Have used them for shakes and never had a leak. I buy the Ball plastic lids(they come in wide mouth or the regular size) they wash up really well and seal great.

Cook's Illustrated has a great recipe for bran muffins that have 1 c wheat bran and 1 c wheat germ. You make the batter and let it rest in the fridge overnight, then bake in the morning. Very moist and pretty healthy.
