I'm in the midst of this debate myself with the canned vs. fresh pureed pumpkin conundrum. Looking at a Kitchn post from a few years back in which most readers heartily approve canned. It must be before the BPA scare. The lack of consistency with fresh pumpkin puree makes for a tough argument in favor of it. It's kind of a bummer.

I understand Bittman's agenda, but wonder if his approach winds up being counter-productive. I'm with him, though, mostly because pie gives me a tummy ache and I adore crisps for their emphasis on fruit while the topping plays second fiddle.

Leela, the photos are absolutely gorgeous!

In response to Neilw: Good question! Because of the oatmeal, they are denser in texture, so they're not like the classic, fluffy buttermilk pancake you may be imagining. It certainly couldn't hurt to add a small quantity of baking soda, though.
