Just a note of caution: Never put amchur in a dish that's still cooking. The tartness stops the cooking. Amchoor is usually the last spice that goes in a couple of minutes before you take it off the heat.
Suggestion:
Fry/grill any veggie (okra, potatoes, onions, zuchchini, bell peppers). Sprinkle a mix of salt, amchoor, cumin powder, cayenne pepper.

Yumm!

Buckwheat is a pretty common flour in India and usually figures heavily in traditional festival/fasting recipes. If you google "Kootu Recipes", you should be able to find a ton of choices. Good Luck!

The Quakers oats boxes in India come with a "Poha" recipe. Poha is a savory breakfast dish made of flattened rice. The quaker box says to replace flattened rice with oats. Haven't tried it but intend to. Here's a poha recipe from an older Kitchn post.

A quick relish-ish recipe: peel and julienne half a cup of ginger, add sliced green chillies and squeeze enough lemon juice to coat everything and then some. Let it sit for a day or so. Eat little at a time along with food (great with Indian and chinese)
