I made truffle cream chicken last night, with oven-roasted cherry tomatoes and potato mash. It's my first time using (or even eating!) truffle, and it turned out AMAZING.

I have wondered about the pairing before, since pepper is just another spice, whereas salt is (literally) vital. I guess the pepper establishment has gotten to me though - I add pepper to everything, even more than salt.

Having said that, I do love pepper as a spice. It has a more subtle flavour than a lot of the others - I wouldn't add anything else to my mashed potato, the flavour would get destroyed.

I was going to comment to Anna_Lauren that this product certainly never existed in Australia before last year, but I see RosieGreenie beat me to it :)

Interestingly, in Australia it is called not "Cooking Creme" but "Cream for Cooking". A whole different level of condescension.

Maybe it's an Aussie thing (although I'd guess not) but I have several big, beautiful, precious cookbooks that I would never dream of taking into the kitchen. They are for reading and inspiration, and if I do want to use any recipes from them I will leave them in the living room and run back and forth, or copy the recipe.

That said, I don't like getting marks even on my cheap second-hand cookbooks, so I may be a bit sensitive!
