Yeah... no. The bacteria you'd worry about here are not killed by stomach acid, so they're not going to be killed by the acid in lemon juice, either.

I do agree that it depends on how long you're talking about, and the time of year... I'd fill them no more than a few hours before serving, or I'd put them in the fridge.

I'm pretty lax about this stuff when it comes to consuming things myself, but you don't want to take any chances if you're serving these to other people.

goulash (n.)
1866, from Hungarian gulyáshús, from gulyás "herdsman" + hús "meat." In Hungarian, "beef or lamb soup made by herdsmen while pasturing."

The word gulyás originally meant only "herdsman", but over time the dish became gulyáshús (goulash meat) – that is to say, a meat dish which was prepared by herdsmen. Today, gulyás refers both to the herdsmen, and to the soup. From the Middle Ages until well into the 19th century, the Puszta was the home of massive herds of cattle. They were driven, in their tens of thousands, to Europe’s biggest cattle markets in Moravia, Vienna, Nuremberg and Venice. And the herdsmen made sure that there was always one "sickly" creature that had to be slaughtered along the way, the flesh of which provided them with a magnificent gulyáshús.

I think it's important to let guests bow out... without pressure! Don't bully people into participating! That's one of my pet peeves.
