My feeling on this- no scientific validity.

Everyone I know who has done this regularly has (at some point) had a jar explode. If they haven't (so far) it isn't because they won't ever have an imperfectly processed product blow up on them; it just hasn't happened YET.

The rings (locking the cap down, while pressure builds up inside the jar) are the things that cause the "explosions"- and the broken glass.

Without the rings, the pressure makes the seal pop. Grody stuff may spill out. The difference is the extent of the damage. Would you rather dump out a bad jar of fermented jelly-goo and clean a spot of leakage on the shelf; or would you prefer to clean up <u>all</u> of the contents of an exploded jar- including the shards of broken glass- from the shelf, floor and all other jars in the immediate vicinity.

Anyone who has done home winemaking knows of bottles fermenting improperly and popping their corks. Would you put a metal seal on the bottle to prevent the cork from blowing out?

Up to you. Your mess; your cleanup.

@ACROSSTHEPOND An "English Muffin" is different from a crumpet (in the U.S. we have both available in bakerys and supermarkets. The "bubble holes" that you see in the picture are internal in our "english muffin"; you would see them only when the muufin is "fork split" or sliced. The crumpet would have those "nooks and crannies" on the outside.

I lived in the U.K. for several years in the ate '70s/early '80s. I never saw an "english uffin" while I was there; but I wasn't looking, either. I wonder if you have a similar product, but by a different name.

An English Muffin, as I understand, is an American product that got it's name because the originator was an immigrant from England.

It will smell awful, but you can usually burn it off in a "self-cleaning" oven (extremely high oven temperature). Alternatively, you can do the same thing on an extremely hot outdoor bar-b-q grill.

If your racks have a shiny chrome finish it may be damaged by "burning off" the problem.

Generally speaking: bread dough is the toughest task you will ask a stand mixer (or a food processor) to do. Motor Horse Power is important. Check something like ConsumerReports.com on the subject; Cuisinart and others make alternative products; some are much less expensive than the least expensive KitchenAid (some for very good reason). Some are much more expensive than the most expensive KitchenAid (some for very good reason)

Your best bet is to establish your needs- again, something like Consumer Reports is good for this- figure out what you want and how much you are willing to pay for it. As someone else said check Craigslist and EBay; lots of people receive these as gifts and have no desire to learn/use them.

The difference between "hand-me-down" and "heirloom" is simply perspective. You have an heirloom device. Parts are hard to get; <u>not</u> impossible to get. For the price of most of the "new heirlooms" you can get 2 copies of the (proven reliability) Oster that you already own.

The storing and cooking the noodles trick works but...

How do the noodles survive in canned, commercial noodle soups? Is there (there obviously is) a way to make noodles tough enough to survive cooking and canning?

Does anyone out there know how Campbell's, Progresso, et al. Do this? Their noodles don't seem to break down even if you leave the pan simmering for hours.
