Don't know if you'd consider this a casserole, but I made (veganized) this recently and it was wildly popular and delicious. Even good room temp.

Also, homemade pizza! You could put a few different kinds together, or set out the toppings and let people make their own on pitas or rice tortillas. It's fun and interactive. Maybe a prize for the most creative toppings combo?

Big pots of soup! Easy to put together, loads of flavor and nutrition, travel well in a crockpot. I'm a fan of lentil soups--so versatile. As the weather warms you could also do gazpacho.

Have a breakfast-for-dinner potluck! Something a little different, and who doesn't like breakfast for dinner? :)

Giant fruit salad. Everything fresh and colorful under the sun. Toss with some nuts and a savory dressing for an entree.

@MISSFIFI Please don't call yourself a vegetarian if you consume fish. By definition, it's technically incorrect and makes things confusing for chefs, diners, and hosts.

I don't see how a vegan is difficult to accommodate--just don't serve any animal products. Easy peasy. A good host is interested in making her/his guests feel welcome in their home, not ostracized or "gone out of the way for."

Furthermore, a good guest with allergies/other issues should offer to bring something for everyone to share. If the host declines, that's up to her/him, but it should be offered.

Definitely tomato sauce, chili, biscuits, salad dressings, crumble/fruit desserts, and I agree with lillyhkm on pie crust. I would also add a good tofu scramble, a few different types of stir fries, and a variety of soups and casseroles.

Couldn't agree more with adr! I use my cast iron all the time with no problems--and I keep hoping there will be one so we have the excuse to get rid of this horrible stove.
