Since I'm a college student I babysit quite regularly. I never expect to be fed so I always bring my dinner with me. Parents usually always tell me to help myself to anything I want. I'm really lucky living in central Austin. I have a central market a half mile from my house. Whole foods is about 2.5 miles south of me, Natural Grocers at one mile, and Wheatsville at 1.5 miles away from my house. It's really awesome having access to really fresh local organic produce.. It's funny because there's a Randells at a five minute walk from my house, but I never go there. Their produce selection is bad and they are way overpriced. I use it to cook all the time because it has a higher smoke point then olive oil. If you're making a curry or coconut thai soup sauteing your base in coconut oil works really well. I also butter my (still warm) toast with it. Baking with Coconut Oil: Our 10 Favorite Recipes |

These look so good! The only issue have with this is that you have to get your hand in there in order to get a little of everything. I don't use lard but not because I have anything against it. In fact, I'd be open to using it and seeing how it compares it all butter pastries or half butter half coconut oil pastries. I think it would also be a good thing to fry with since it has a high smoke point. A lot better than frying with rancid vegetable oils or Crisco. If I did buy some i would definitely buy the lard produced by local farmers who pasture-raise their pigs. I also would disagree with saying one product is better than another product because of nutrient content (sat fat). I think people these days tend to focus way to much on the specifics of food (calories, grams of fat...) instead of focusing on eating high quality whole foods diet. Having said that, I think you included that information to debunk preconceived notions that Lard is insanely high in saturated fat and is extremely artery clogging. Do You Bake with Lard? mmm, so many good brands: Callebaut, Valrhona, Cote D'or... However, most of the time I buy what's on sale or from bulk at central market. I went to college in Arkansas for three years before transferring to UT Austin. When I left, I vowed to never shop at a Walmart again and thus far I haven't. Wow, I'm surprised there are so many people counting calories. It seems extremely exhausting and I would never waste my time doing that. I feel like if you eat whole healthy foods, mostly plants, and no processed food, then this worrying about excessive calorie intake. It seems like calorie counting could get obsessive and one would lose focus on where calories are coming from instead. I did a 3 day food analysis for one of my labs. Since I eat everything from scratch with a lot of variety, weighing everything got old really fast. And it is more time consuming to weigh every little thing out so you can record how many calories you've eaten. Anyway, this is just my experience Counting Calories? I don't eat almond butter anymore because it's like crack for me. I can't seem to just have a little! Whole Foods self grind organic almond butter (from toasted almonds) is the best! It has texture and it's so damn good. I would eat on gf crackers with a sprinkle of sea salt (flaked is best). Makes me want some just thinking about it... Kombucha (they make awesome flavors these days) and Kevita (sparkling probiotic drink: the mango one is my fav; they are available at Whole Foods). I'm from Belgian (although have lived in US for 18 years, since I was four) so my parents taught me the Euro way. I remember eating at my friends houses when I was little and noticing how strange the American method looked to me. Now that I'm in college and I eat salads most of the time I just use my fork in my right hand. Whenever I use a knife it's always in my right hand with my fork in my left. I say the more natural the better. It's easy to get enough fiber if you eat a whole foods diet. Adding fiber to processed foods is not a scheme to get people healthier, it's just a marketing ploy trying to get people to buy the food because they think it's healthy for them. And added fibers and gums (chicory and guar..) to foods are notorious for causing painful gas and abdominal distention. If you need to supplement, they sell some really great products at the health food store. Psyllium is good but it can also cause GI distress. Garden of Life sells a really good product called Super Seed Beyond Fiber and another called Raw Fiber. As with all fiber supplements, it's better to start start slow especially if you haven't been getting enough from your diet. (This is especially true for psyllium based products!!)
