Sunchokes are also a natural source of insulin. They taste great when they caramalize a bit. I love to saute them on the stovetop in good butter till they are a tad bit crispy on the edges. another great way is to thinly slice them with a mandoline and then deep fry them in beef tallow! YUM! I'm making some tonight

Another interesting fact: they are the roots to a species of sunflowers: http://www.duvallfarmersmarket.com/images/sunchoke.jpg

i lived in india for a year and we would buy hot tea on the street twice a day. They cool it by pouring from one cup to another with a lot of space in between the cups. the exposure to the air cools it down. plus the process is very dramatic. see example herE: http://www.worldofstock.com/slides/PFO11338.jpg

a puree would be good but my favorite way is to slice small with a mandoline, then saute till crispy and caramelized in butter or if you are really decadent beef tallow with fresh rosemary

On Monday I made a squash and zucchini pizza. Thinly sliced the squash and zucchini placed on pizza crust with Basil pesto on it. Then added roasted eggplant slices and goat cheese. It was delicious.

Julia Child shows viewers how to kill a lobster in this manner with her usual wit. It is one of my favorite episodes of Julia. She does it because she thinks this technique also brings out the best flavor. In the same episode she also uses her asbestos hands quote when referring to picking up the red hot lobster.

I manage a local farmers market in DC and one of our farmers brought me a gift of raw milk butter. It was so indulgent to eat my baguette last night smeared only with butter. YUM!

I love to make Rhubarb compote by heating with sugar and butter until mushy. Then I keep it in a air tight container and spoon over fresh plain yogurt from the market! It is so simple yet so good: http://producejigsaw.blogspot.com/2009/05/tang-of-spring.html

Trader Joes has great pre-made pizza dough in three varieties: plain, herb, whole wheat. And it is only $0.99. I made a great pizza with it the other day: basil pesto , portobello mushrooms (marinated in olive oil rosemary and rep pepper flakes) topped with roma tomatoes, fresh local mozerella and fresh green onions.

I always have morels at least once a year. Most of the time to retain the distinctive morel flavor, 1) i soak in salt water for 15 min. 2) slice 3) slice in rings a shallot in olive oil and butter 4) add morels 5) add a tad of cream

YUM!!!

Book Recommendations: The new Square foot gardening by Mel Barthalemew. It is great, he has small space gardening down to a precise science. Try just a 4x4 to begin with. I've been doing it this way ever since 3rd grade.
