I made this chicken last night and it turned out AMAZING! I used 2.5 pounds boneless/skinless chicken things and 2 large chicken breasts. I followed the recipe exactly and it could not have turned out any better. My husband loved it as well! I served it on dollar rolls and topped each dollar roll with a slice of avocado, perfection! We also had a side of green beans with celery salt and then a cold salad of cherry tomatoes/white beans/dill/garlic/EVOO/balsamic, very good. I made this last night. The tequila is very overwhelming. The color is beautiful. The taste is heavily flavored with tequila and I guess it is an acquired taste. The recipe was followed to a T and it came out well. Recipe Review: Rick Bayless' Dairy Free Avocado Ice Cream |

I made this last night for myself and my fiance. We both loved it!!! Would possibly add shredded chicken in the future (if looking for a non vegetarian dinner). I used Pillsbury thin crust dough and it came out great. Will be making again! Weeknight Recipe: Southwestern Pizza with Black Beans and Corn |
