When my son got married in a rustic cabin in Julian California, I was responsible for making the rehearsal dinner for 32. I made delicious homemade lasagna ahead of time and froze it. I baked a variety of homemade cookies and biscotti ahead as well. Once there, I made a lovely antipasti plate of olives, cheeses, and meats served with crusty bread and crackers, a beautiful salad with homemade vinaigrette, the heated prepared lasagna, and cookies, tea and coffee for dessert. Easy and what a hit. On a special note...this if also good for all sorts of appetites...vegetarians, even gluten free...

I have an organic produce buying club here in Florida (go to face book...The Joy of Organics and please like). I know how important it is to eat the correct number of servings of fruits and veggies each day. I make a big fruit salad at least twice per week. When i cuit up the fruit I put about a tablspoon of local honey and this not only adds flavor, but keeps the fruit fresh. We eat this every morning for breakfast. I like to add a spoonful of cottage cheese and eat it with homemade sourdough whole wheat toast bread MMMMM!

For lemons and limes I zest them and freeze the zest in freezer safe containers for use all year long. Juice goes in many ice cube trays and then I place the cubes in zip lock bags for future use. This can be used for anything from lemonade, desserts, or cooking. Grepefruits are so wonderful in morning fruit salads, and evening dinner salads. Frozen grapefruit juice makes incredible frozen marguaritas or mohitos. Hope this help!
