Eek! No butter or vegetable oil, you need to use lard (other pork fat or bacon fat is ok for paprikas). And while potatoes or even rice soaks up the sauce nicely, I agree with the spaetzle contingent: best accompaniment possible.

I've been using boneless skinless chicken thighs in my paprikas, and it works beautifully: I like my chicken skin roasted, not boiled, and thigh meat has the best flavour IMO. Also I'm not fond of picking out the bones :)
