I totally agree with Alicelost - making the "real thing" is an art. I think I've come across one of the tricks of the trade, which is making an emulsion of the tahini, lemon, and water BEFORE adding the beans... Are there any other tricks out there?

If you have enough ramekins or little mugs/bowls, you could do individual prosciutto & egg cups... These are super easy to throw together, although I'm not sure if easy individual portions vs. one gigantic buffet style portion would be better for your needs!

I prefer coffee in the mornings, so I keep tea around for when I'm feeling sick. Or cold in the winter. I usually keep Tension Tamer, something gingery for when I'm sick, Throat Soother for when I've got a cold, and Good Earth because it is sweet and cinnamony.

You could mash them with eggs & breadcrumbs, form them into little pancakes, and serve them with something on top. Maybe mushrooms & gravy...? Or add additional herbs and cheese, then let the little veggie pancakes stand alone as a side dish to salad?

Hey cute! Love the tiny portable size! I just did a bigger version in a cast iron skillet. Basically a thin crispy crust of hash browns on the bottom, topped with eggs & cheese and then broiled till done. So easy & impressive. Two more ideas that I personally love & use a lot:
1) put salmon fillets in parchment, drizzle with olive oil, salt, and then top with some thick lemon zest peels & capers. Bake at 350 for 10-15 minutes
2) top salmon fillets with a mixture (equal parts) mustard, brown sugar, and soy sauce. Broil on a baking sheet for 5-10 minutes

Both easy, both delicious. Thanks for the new ideas, I'm stuck in a rut with these two :)

I have cut back on animal products but wouldn't call myself vegan. I believe we're so (comparatively) wealthy these days that we can afford to eat MUCH more in the way of animal products that our ancestors were able to. The China Study is an amazing read if you are interested in learning more about the benefits of going vegan. I will say - my mom is vegan after reading it :)

I do this too, but with a slight variation. I blend (or food-processorize) the whole tomatoes for just a few seconds to chop them up into an early-stage sauce. It takes up less space in the freezer and is easy to add to soups, sauces, baked things, etc.

Another good (& healthy!) one is homemade bite sized lara bars. If you have a food processor it's easy - one part raw nuts to one part dates, plus any flavoring you like. One of my favorites is cashews, dates, and fresh vanilla bean seeds with sea salt sprinkled on top. Like a healthy salted caramel!!
