Another vote for fresh herbs! Scallions, parsley, and cilantro are cheap (I get 2 bunches of scallions for a dollar, and parsley and cilantro for around $1.00 a bunch) and make cheap, simple foods, like lentils or potatoes, feel super fancy. A few years ago I bought magic berries (those berries that make sour things sweet; you can get them on Amazon) and a bunch of citrus fruit, plus some interesting veggies, and we all ate the berries and then chewed on lemons and oranges. So much fun! Cute & Healthy Party: A Fruit Tasting! |

As a side note, have you guys ever tried skyr? It's (ridiculously expensive) Icelandic yogurt, and it has an insane amount of protein in it. Siggi's version is very, very lightly sweetened and has some rad flavors. I like to eat it as is, no toppings, when I'm feeling like I need a little healthy fancy-food treat. We usually keep it in big tupperwares with fenugreen, which is this incredible miracle invention thing that keeps veggies fresh for absurdly long periods. Like, those salad greens I can never get more than a week out of? 2 weeks! I never buy these gimmicky products, but this one actually works, and the story behind it is neat. I've been biking to work everyday for 2 years, and I feel your pain! The solution I've come up with, which works well for me, is a combination of Link foldable metal bike baskets and the Link laptop lunch bento box. It has 4 little containers, one with a lid and the other three without, plus a fork and spoon. The boxes without lids are held tight enough against the top that the food doesn't bounce out, and when you open up the lunchbox your lunch looks so appealing. Just made this and it was delicious! I think if I made it again I would cut down on the olive oil, though: the cake is moist enough without it, and my version, at least, felt greasy. Also, DIPS. You would be shocked at how much more the kids will eat if it's an interactive snack. I make a mayo and sour cream ranch dip (not the healthiest, but they each only get a bit) and they'll eat as many cut up cucumbers as I can give them. Baby carrots are a big success, too. I work as a cook at a preschool and I've had a lot of luck with the savory recipes from Baby Let's Eat! (http://www.amazon.com/Baby-Welcome-Books-Workman-Publishing/dp/089480300X), a cookbook geared towards feeding kids under the age of 5. Staying with the goat cheese/honey theme, I've been really excited recently about a simple appetizer of quartered figs, goat cheese, a tiny dribble of honey, a sprinkle of fresh thyme, and a couple grains of big chunky sea salt.
