You will need to steep the tamarind first in some boiling water for about 15 minutes. If you would like to speed the process you can just throw a chunk of it in a pot of boiling water until it starts to break down (not all of it will get dissolved). After, I would suggest putting it through a wire mesh or sieve to sift out any particles. This should turn that goopy mess into a smooth concentrate (I would taste the concentrate to see it’s potency). Then add to soups or to a marinade for meats! How Do I Cook With \"Wet Tamarind\"? This is the only way I cook my pizza! If the stone is too close to the bottom, I notice that the pizza burns the bottom before the top gets brown. Baking Pizza: Top or Bottom Oven Rack? |
