Pickle them! They're so tasty when pickled in strips or slices, and they'll keep for ages when pickled properly.

I've also made a pesto with celery that got me to use half a stalk in one go..

Pickled is better, though.

@magnetism--you can always just ladle out the foam as it rises; that's what I tend to do when I see foam of any kind.

I actually poach my eggs and, if I feel like an au lait, pour milk into my coffee mug before lowering the mug into my egg-poaching water. I hold the mug partially submerged but not touching the bottom of the pan while I watch my egg cook and the milk gets to be the perfect temperature by the time my eggs are done--and no mess since I'm pouring coffee straight into the same cup and drinking it.

Plus, my entire mug gets all nice and warm, which is perfect for recent cold mornings.

another suggestion for tuna: crepes! or any other tuna+carb combo. crepe batter is so simple and keeps in the fridge for a while, and a savory crepe with tuna+any additional toppings (onion, jalapenos, celery, etc) makes for a great, relatively light meal.

Street vendors sell this everywhere in Korea! My parents used to tell stories about eating this on the way home from school, and about the grandfathers who would peddle little stoves to make this for kids in Seoul :D My parents make it us at home now--always a classic :P
