Second or third the paleo books...well fed, paleo comfort foods, food lovers primal palete. Also google "mark's daily apple" and look for online recipes there. I stumbled upon paleo when I had to go gluten free and feel so much better since reducing grains in general (I will eat corn or rice on occasion but generally stick to meat, fats, veg, fruits and nuts. Eat simple whole nutrient dense food and you'll feel the better for it! I avoid processed stuff and never go hungry.

Recommendations for a Good Low-Carb Diet Cookbook? Product & Shopping Questions

saturated fat has been unfairly villianized in this society...people, we need cholesterol and fat- its the base to building ever steroid hormone we have....it protects our brains....people who eat low-fat/no cholesterol diets are doing their bodies a disservice.

saturated fat is ideal to cook with bc it doesnt oxidize (oxidaation causes inflammation)...you are better off leaving your olive oil to drizzle over veggies and salads but NOT cooking with - thats what lard, butter and coconut oil are for.

highly recommend reading primal body/primal mind, rob wolf's books, hell, even gary taubes for more info.

Before finding out I was celiac, I used to make awesome irish cupcakes with a chocolate stout base layer...would this be a good sub for the guiness usually called for in these recipes? If not, does anyone have a suggestion? Would love to recreate my old favorites...

Oh my goodness - just made it tonight and will go into our thanksgiving perma rotation! So delish. I'm celiac so made a crust of gluten free ginersnaps/pecans and it really added a lot to the pie Thanks for the great recipe - raw eggs be damned ;)

I'm not the biggest fan of stuffing....but my husband of one year is and for him it means pepperidge farm. I got the recipe from him mom to make last year and the year before but this year poses a new challenge: I've since been diagnosed with celiac disease which means the bagged bread is OUT. I'm terrified! He is super supportive so wants me to try my hand at gluten free. I found a bakery that is 100% gluten free and sells croutons for stuffing and I have to say that it does smell and taste pretty much like PF - I am keeping my fingers crossed!

The Great Stuffing Debate: Pepperidge Farm vs. All the Rest

In the same boat sigh. Diagnosed with celiac and another autoimmune disease and avoiding sugar as well as gluten....I'm known as a foodie and a cook so while it's helped a ton and I could never go back, its left me at a loss.

I'm trying to have a good attitude - looking at it as another challenge...instead of mastering pie crust, or relying on flour, I'm finding great recipes that highlight almond or coconut flour and people are going bananas for them.

One surprise - many people PREFER healthier treats. While I loved baking, I never really loved having the stuff in my house at all time...I'm seeing that many freinds felt the same way: they loved AND hated when I brought sweet treats. Now hostess are much more appreciative of say, my AWESOME hummus.

Try perfecting bacon jam or sausage or the like...start to be known as the person who makes awesome dips or salads. You'll be more popular than you think!

I havent quite gotten the hang of homemade but I want to master it as it does win the taste contest. I agree with another commenter about feeling wasteful b/c I generally never get through a whole jar of hellman's before I throw it out, so I suspect that homemade is actually cheaper (at least for me). The fact that I can control what goes in it (good quality oil, organic pasture eggs, etc) is a huge plus.

On another note - if you are lucky enough to be given a "Secret" recipes, you MUST ensure that you give credit where credit is due as in "this is so and so's famous cookies" ....otherwise you are just as bad as the secret recipe gang ;)

Do You Have Any Secret Recipes?
7/10/11 10:37 PM

I think it's silly to not share as well. Incredibly misleading. If I asked someone for a recipe and they gave me it minus the "secret", I'd be ticked after spending time and money only to get something subpar - that's just wrong.

I always tweak recipes anyway so awesome recipes that people are kind enough to share inevitably change to some degree.

One friend of mine is absolutely amazing in the kitchen. She was incredibly generous in sharing some of her favorites with me and it triggered a new obsession with cooking! Now, i have great recipes of my own that I share with her.

Great recipes bring people together and inevitably create more delish recipes down the line...pay it forward :)

I think its a karma thing....feel free to not share but karma's a #$%%#

This is what a home should look like (imo): lived in cozy and authentic. Well done! I am extremely jealous of all those lovely architectural details and love how they respected and worked with those details

I think the concept of the plate vs. the pyramid is great. However, I think it's crazy that they think they can pick the best plate and have it apply to everyone.

I do better when my plate resembers more of ruthbourdains as mentioned above.

I'm celiac and grains in general (even those not contain gluten) affect me terribly. I am also lactose intolerant. So the dairy is off-base for a large part of the population...

The grain portion - IMO - should be small or nonexistent. I still can't find a solid argument that explains why we are supposed to have some type of grain with every meal? I can only gather that grains are just a cheap (though nutritiously void) way to fill bellys. I get plenty of fiber from my veggies and fruits. Has anyone reasearched if any grain/corn company's "contributed" a lot of money to this new guideline?

A more nutritious plate (or me) would have a lot protein, a lot of veggies a small serving of fruit and ...I'm missing the fat! Oil, nuts, etc.

However that would only be MY plate, it obviously wouldn't work well for a vegan.

I'm just saying that I'm not sure what this is supposed to accomplish; it clearly only works or is aimed at a small population of the people...

We've been pushed the standard american diet for years and the population as a whole is only getting fatter (isn't that what they base school meal programs on and childhood type 2 diabetes is on the rise...hmmmm)

Goodbye Food Pyramid, Hello Food Plate

I prefer almost everything homemade...however, I have NEVER tasted homemade that tasted better than store bought ketchup. I have read gladwell's article and agree with it completly.

Like somebody else mentioned - it would make a "cute" gift for a bbq or houseparty, but otherwise, it doesn't make sense to put that much effort into something that is at the end of the day, mediocre or subpar...I would rather but my energy into something else that will have more impact on the enjoyment of the meal

Also - I find there to be declining standards all around: meat re-calls, salmonella outbreaks in spinach/veggies etc. Avoiding a food group wouldn't work (even Peanut Butter is recalled, ugh) b/c something else will be recalled next week, you know? Which is why I try to figure out where my food comes from as much as possible.

I cut back in other areas so that I can afford good quality healthy food. With my health issues, I figure this will save me money on healtcare down the line. I've even cut back on my notorious sweet tooth. Live and learn

Meal Planning: Is Meat the Center of Your Dinner Plate?
4/20/11 8:32 AM

I have actually gotten HEALTHIER since eating more meat (I eat almost - I hate this term too, paleo)...this is a personal decision and not for everyone, but I have gluten intolerance/celiac which severely limits what I can eat. On top of that, I don't do so well on grains in general...so yes, very veggie and meat heavy (with eggs nuts, etc thrown in).

However, I cut back in other ways so that I can afford, local/organic/grassfed/humanly raise etc meat, poultry, fish.

When I went meatless for a while I became anemic despite ensuring I was eating enough iron, protein etc....however, my body just didn't seem to absorb the nutrients (celiac might have been the culprit there), so I switched back and have been feeling a lot better.

I have friends who did the opposite: cut out meat from their diets) and they say they feel healthiest that way....do what works for you!

I love my staub, like someone else, I got the oval with the chicken knob (they have versions with a more classic knob, but the chicken killed me, adorable!)....I love it. I went back and forth a lot between le creuset and stuab and the staub one b/c of the self basting spikes on the inside of the lid and the easy to clean interior. Plus, a part of me loves it b/c everyone I know has a le creuset and I like to be different ;)

My husband couldnt stand the organic all natural PB I was getting, until I started buying Trader Joe' creamy...its the cheapest best tasting out there! We stock up. I'm a fan of chunky PB as well: LOVE TJ's valencia with flax (slightly more expensive).

However, nothing beats Skippy for PB cookies!
