i've now made this recipe twice, once with brisket and a second time with regular steaks (both cuts from a grassfed beef CSA), and it came out great both times! so easy compared to other slow-cooker brisket recipes i've seen. thanks!

i remember because i searched for a solution here when i had a similar question, only to have that post show up the next day :) i did make end up making a nice spicy vinaigrette dressing with the leftover brine!

i made this a few nights ago - it was my first time cooking goat at home. i had to make a few substitutions (dates for prunes, red onion extra garlic for shallots), but i loved the result. it was probably a little sweeter than some might have liked from the dates, but it was perfect for me. the meat was tender though not quite as falling-off-the-bone as i had expected, and actually not as gamey either. it's such an easy preparation, i'm sure i will be doing it again soon. thanks!

in sf, there is a stand for The Critical Edge at the ferry building farmer's market that sharpens knives, and i think they do it while you wait/shop, but you have to go early - their order queue fills up before noon i think. i haven't actually used them yet, but might soon. they have great reviews on yelp too.

i bought a small black truffle from oregon to shave over a soup once, and found it to be really good - it probably didn't have the intensity of flavor of the ones you'd import from italy, but it was still quite pungent and added a nice earthiness to the dish. it wasn't extraordinarily expensive, either.

made this tonight after finding some nice broccoli at the farmer's market. it helped me use up some currants that i've had stored for a long time now. i used sliced almonds instead of slivered (since that's what i had on hand) and substituted some with peanuts too. great recipe, thanks!

i've made the flickr recipe posted by thousandfold before with success. the cream cheese frosting was a little runny, but i probably just didn't add enough powdered sugar. strawberry cake is my favorite - looking forward to trying some of these other recipes.

i too love oatmeal but it's been so hot in the bay area i've been wanting nothing but cold meals, so i made this last night - it's so good! i used dried apricots and put them in overnight with the milk and oats and they plumped up. i also put a few fresh strawberries in the morning with some sliced almonds. i didn't need sweetener at all, the vanilla and fruit were enough! i'm excited to hear you can do this with steel cut oats too - i'm thinking it'll last longer that way - so i can make a bigger batch for the week. i'm going to try that next. thanks!

i tossed a couple trays during last year's cure - i realized that i could just use a container like you describe if i ever needed more than one tray's worth of ice (for a dinner party, say). but i don't leave it in the freezer, i just use a large tupperware container and start making ice a day or two before it's needed.

i read this post a while back about the success of cook's illustrated (in its many forms) and found it quite interesting:

the fact that they have managed to not just survive in a time when so many print publications are failing, but also *grow*, hadn't occurred to me before, but it's pretty amazing - they not only have a growing base of print subscribers, but many of those people also pay for an online membership! i certainly fall into that category, and CI is also the only print subscription i own.

i would suggest noting that you should not open the oven door at all for at least the first 20 minutes or so (depending on what is being baked, as stated above), otherwise you will end up with not-so-puffy puffs.

as for when to tell the dough no longer needs to be on the stove (after dumping the flour in), i just stir vigorously until the batter pulls away from the sides of the pan.

i discovered that you could buy pearl sugar from ikea on this site, and i've been using that to sprinkle on chouquettes - it's awesome, though many people think it's large-grained salt at first :)

i just put this in the oven, but i was perplexed as to why i had so much more batter than could fit in my cake pan - granted, i'm not using a springform, so mine is probably shorter - but i decided to check the original recipe in the nytimes. it states that 3/8 cup of sour cream should be used, not 3/4 cup as stated here - please correct! i hope mine turns out okay. i ended up splitting the batter into two pans, and i'm hoping the one i started with doesn't overflow..

i made this tonight, too (the post was so convincing!) - really amazing flavor, i couldn't stop eating it. but the breast meat was a tad dry for me, even though i left the lid on for the first hour and occasionally basted it with the liquid. maybe the basting was my problem - should i have just left the lid on the entire hour, and not crack the oven or the pot at all?

definitely an awesome recipe for its simplicity though, and i will make it again soon (maybe with individual parts instead of a whole chicken though, just to test scalability).

i use the trader joe's sponges but they do fall apart on me kind of quickly, like after a few weeks or so. i wonder if the w-s ones are somehow sturdier? also i like the TJ's sponges because they are 100% vegetable cellulose and can be composted (not sure if w-s's are as well).

thanks for the post (and for the link to mark bittman's TED talk, i hadn't seen that yet).

i feel like i've done a lot in terms of my own personal choices - i shared a grass-fed/finished beef CSA with friends this past year, shop at the farmer's market weekly for produce, support a local market that is mostly conscientious in its offerings. i've recently started to eat more whole grains and vegetables and less meat generally.

but when it comes to raising consciousness in others, i feel like i'm either preaching to the choir, or talking to a brick wall. i've started to use facebook to promote articles and ideas, and i'm hopeful that i can reach people that way, but i still wish i could do more.

in that interview linked to earlier this week, michael pollan said "People have strong, quasi-religious views. Secularizing the issue is challenging." this summed up how i feel very well - it's really difficult to change people's minds about food - it has to come from their own curiosity and learning. but i'm inspired by the simple message that both michael pollan and mark bittman are promoting, which is just to eat less beef/meat. i don't think everyone needs to eat exactly the same way i do, but if everyone would just change one thing in their diet like that, it could make such a huge difference.

i've been recently obsessed with david lebovitz's recipe for butterscotch pudding - it's just amazing, really addictive, and as one friend put it, it's a very "adult" pudding flavor (especially since he throws in a bit of whiskey, even though that's not the origin of "butterscotch"). i've also made melissa clark's recipe for milk chocolate pudding with bananas, and it is also divine.
