I made this and kept it veggie by omitting the chicken and just adding sliced carrots. Delicious flavor! I plan to remake it SOON and add more veggies (mushrooms maybe?) but to also double the amount of ricotta and white wine. This should give me a richer and creamier overall dish. It wasn't too dry but I'd like it a bit more "saucy". I also added dried italian herbs and extra parmesan to the ricotta blend and that worked beautifully! Recipe: Chicken & Swiss Chard Pasta Bake |

I do a Mexican quinoa similar to this recipe - http://www.food.com/recipe/mexican-quinoa-salad-419089 - topped with extra cilnatro and sliced avocados. Super fat and yummy. This is similar to the recipe that CCKelly suggests and I have to co-sign their suggestion! How Can I Get More Quinoa in My Diet? Good Questions |
