I have made stuffed pumpkin several times - once with a savory filling of rice and lentils and once with sweet rice, apple and dried fruit. I've also had one filled with curried chickpeas. Delicious!

It is used a lot in Jewish Yemenite cooking. They call it hilbe (the "h" pronounced kind of like the "ch" in Challah). The dish that it is used for is also called hilbe.

I love this liqueur and highly recommend Clear Creek Distillery Blackcurrant liqueur. It is the best I have ever tasted. Also, their pear brandy is a nice way to spike hot apple cider.
