I love love love thinly sliced and grilled zucchini, eggplant and spears of asparagus with a bit of olive oil, salt, ground pepper and a splash of balsamic vinegar reduction. Another favorite is simply grilled fish & shellfish - calamari and/or cuttlefish are my faves drizzled with olive oil, salt, ground pepper and a squeeze of fresh lemon juice. So satisfying. Just came back from 2 weeks in Spain and the eating is amazing! From Middle Eastern inspired dishes in the south to incredible seafood in Barcelona and huate cuisine pintxos in San Sebastian and the Basque country. I loved sampling how different a tortilla de papa tasted everywhere and how easy it was to devour an entire serving of boquerones (fried sardines) like a bowl of popcorn. We had everything from tapas to sit down meals and lots and lots of beer, wine and cider. And I lost weight to boot! A wonderful country with a rich heritage which is reflected in their cuisine.
