The butter tip confuses me, since the pastry chef David Lebovitz recommends not beating the butter and sugar too much, because more air contributes to cookie spreading:

"When you beat butter and sugar, those little crystals of sugar create air pockets between the butterfat. The more you beat, the more air you incorporate (those trapped air pockets steam open and expand in the oven). That’s great for a nice, light cake…but not for most cookies. So when the recipe says, “Cream or beat butter and sugar”, just mix them for about 30 seconds, until well-combined."

I've cooked with gas and electric, and our current house does not have a gas line. The ceramic stove I have now is not ideal, but when I get to buy a new one, I will go for induction rather than gas. You get the same or better control, but it's much more energy efficient, and much less likely to set a tea towel on fire. :)

I love the idea of the rails on the inside door. Our linen closet is what we call a 'hot press' with the hot water tank stored there with slatted shelves above it. Hanging towels on the inside of the door would help them dry, what with the extra heat in there.

Every time I see one of these posts, I get newly frustrated with the design of my house. The 'entryway' is a narrow hallway. You put hooks for coats, a shelf for keys, and/or a place for shoes, and the first impression of the home is cluttered. Our entry-hallway is not a place for taking off coats or shoes. Its one message is: move! So coats come off once we get to the kitchen at the end of the hallway. I would like to make a 'landing space' there to keep stuff off the kitchen table, but it's still not a good place for coats.

One recommendation that made me feel hopeful about my house rather than despairing was the advice (in another post) to place something you love in position to be the first thing you see when you walk in the door. That something, for me, would not be coats or keys.

I feel like the implication behind the titles of his books is that everyone else isn't 'really' cooking, which is kind of a shame since I like to think that his intent is to affirm efforts in the kitchen, no matter how sophisticated. That said, I like his essentials.

I was delighted to see a recipe for cornbread dressing, and I'm confident that this dressing tastes delicious--but I'm disappointed it calls for a boxed stuffing, especially since I have no access to it.

Interesting about the chef wanting to eject perfumed guests. I feel that way about cigarette smoke. It is highly frustrating to me to sit down to a lovely al fresco meal, only to breathe in someone's cigarette smoke. Beyond the health issues, beyond the general unpleasantness, the smell interferes with my taste of the food itself. If I were a chef, I wouldn't allow smoking anywhere near the food.

I like the way it's done in the Ardsley, the Michigan, and Melody's. In all three they're still making use of the walls for storage; they're just also making room for sunlight. Come to think of it, my kitchen, while not nearly as nice as the examples above, is similar in that the entire wall above the kitchen sink is a window, but there's still plenty of upper cabinet storage on either side of that wall.

The drink looks fab, and I love the idea, but I'm always a bit crestfallen when I see a frozen concentrate as part of a recipe. No doubt if I lived somewhere where that was available, I would use it, but I don't so ... what's in frozen limeade concentrate besides lime juice and sugar?

Our entryway is a single long narrow hallway--no room for any furniture at all, and hanging things on the walls seems like it would make it seem even smaller and more cluttered. I have yet to see a workable solution for it, but would love some ideas.

This looks great. I love avocado and am happy to introduce it to new recipes whenever I can. However, I'm confused about the mayo-hate. A good mayo is just egg yolk and olive oil right? I get that that's a high-calorie and high-fat food, but other than that, what's so evil about it?
