Yes I struggle to see how this study would stack up in locally raised and grown setting. In Portland, we can regularly purchase cheese directly from the farmer, who uses their local pasture to feed the animals, and also opts for the solar power energy offered by PGE.... I have trouble understanding how the footprint would be so large. I wish they'd given real examples, and more data to support the argument. It behooves studies like point out that there are two arguments to be made, purchase local & Organic whenever possible, even when purchasing locally investigate the practices of the people you regularly purchase from, and of course eat less meat. My husband and I just moved from from Arizona to Portland ... from 1/4 of an acre and a 1500sqft home.. that we barely fit in .. to a 900sqft downtown loft. We've had to change enormous amounts to our daily life. We've consolidated to one car, we have one small storage space for our "gear" and guest bed, and we've had to really focus to what we cherish, what works, and what we choose to feature in our limited space. The change has been painful at times, but in the end the reality has been fulfilling... things can become an albatross to progressing forward... we begin to make choices based on what will accommodate our "things" versus choosing a place that captures our heart. Learn something new everyday! I never even thought to freeze my compost! That's an excellent idea! I don't really freeze much anyways and that makes it more realistic than sending my husband to the compost pile several times a week and having to clean out the container cause of the days it sits and rots under the sink! I used mine just the other night to make some wonderful potato and leek soup topped with white truffle oil! It worked wonderfully, much better than my food processor and it was significantly easier to clean up! I'm in love! I Have a New Immersion Blender! How Should I Use It? Good Questions |

These are absolutely wonderful! And there is no replacing their heat and flavor in the kitchen, I just recently used them in a recipe I found for pumpkin tortilla soup! And an alternative to quinoa, not to mention a much faster one is always couscous... which you don't even have to have heat to cook, just some hot tap water and couple of minutes will do! I made this tonight for dinner with a pumpkin we didn't carve for Halloween... It was fabulous! I added a cup of wine wine, and some roasted green chilies from the farmers market.. just great! My husband ate THREE bowls! Also, I only used about one Tbsp of Olive oil and toasted the corn tortillas under the broiler with excellent results, frying is nice, but messy and fatty :) Recipe: Pumpkin Tortilla Soup |

How funny, I just bought this cheese at random last weekend at trader joes! I love it, and I am hopeful to try it on some sweet potato fries cut into small chunks and added near the end of their baking... I had something along these lines at a wonderful place in Arizona and the spicy cinnamon was just perfect with the salty sweet of the fries. Not healthy, but good!
