That is a great idea. I blanche a lot of vegetables, but never have enough ice for an ice water bath, as I don't have an icemaker in my fridge. I'm going to try the fan on cooling down boiled eggs, too. Unexpected Favorite: A Paper Fan |

I have the even smaller 2 3/4 size, and I use mine constantly. In addition to all the above mentioned uses, the smaller sized Le Creusets are great for fitting in the refrigerator. So if you want to cook something ahead and keep it in the fridge, it doesn't take up as much space. This comes in really handy if you've cooked a braised dish and want to skim the fat off later. My biggest pet peeve is when they use metal utensils on their non-stick or enameled cookware. I know that the shows have big budgets or are given cookware by their sponsors, but people at home do not have this luxury. My cookware is an investment, and I always use wooden spoons or silicone on them. I absolutely cringe when I see someone scraping a non-stick pan or the inside of a pristine Le Creuset dutch oven with harsh metal utensils. There is a 1 lb. container of Earthbound organic greens that is available in Bay Area Costcos for less than $4. (I get the spring mix, not sure if they carry the herb mix.)
