I'm not sure what happened but I had to cook it almost twice as long, and even though the top and bottom both ended up with a nice crust the middle is really soggy -- almost more like a pudding than a cake. I grated the apples rather than chopping, maybe that released too much liquid? The flavor is good but the texture is kind of too mushy for our tastes. I'm disappointed.... Really no need for the glaze -- it is overly sweet and goopy with the glaze added. I left one pan without the glaze and those were just right. I also kneaded the dough a bit before the first rise, and the rolls turned out very light. Will make again for Christmas brunch. Recipe: No-Knead Pumpkin Rolls with Brown Sugar Glaze |

These are really good! We didn't have any ground ginger in the house, so I substituted cinnamon. I also threw in about a tablespoon of maple syrup we had left after breakfast pancakes. I was going to cut down on the oil to 1/2 or even 1/3 cup but got worried the cookies would be too dry. Next time I will cut back as there seemed to be more than enough oil.
