Hmmmm, interesting comment. I think this pasta dish looks amazing and is well photographed. Staging is pleasing to the eye and the dish looks delish! I love the idea of using Greek yogurt instead of cheese but do agree that soft brie or goat cheese could be substituted for another twist on this dish. I love Lake Street Market! Each summer these are staples on the breakfast table of my friend's cottage. This year I ordered some to enjoy at Christmas. As I live nowhere near Boyne City I had them sent to my house. They were very nicely packaged, still frozen when they arrived. Delicious! I ordered 1 sweet (apple walnut) and 1 savory (ham and cheese)...Each log can be sliced into 6-8 pieces....My mouth is watering just writing about them! We grew up with Mom's recipe that is quite similar. She used ground pecans, bread flour, butter, vanilla, salt, ice water (to cream butter and vanilla), powdered sugar. Rolled into "finger" shapes rather than balls, we called them "Pecan Fingers". I took the recipe out last night and plan on making them today! Santa's Cookie Recipe: Holiday Snowballs |

I'm loving all the eggplant varieties! Last week at my local farmers market one vendor (farmer) was selling at least 6 or 7 varieties of beautiful eggplants in all shades of purple and white; tiny, small, medium, large, giant; finger-like, oblong, round. I've had one for years. I bought it at Marshall's for $10.00. I keep mine in the trunk of my car and use it at the farmer's market, transporting things to my classroom, carrying items to a pot luck, etc, etc. I love it and it's a cool lime green!
