I slice the bread and keep it in the freezer in a reusable cotton drawstring bag (those large bulk food bags). We microwave or toast the slices for immediate use, or if packing lunch for the next day, I just use the frozen slices. Works for rolls, too!

There have been reports of scams here in SF, and they sound very similar to your situation. An apartment that is too good to be true, a request for a hold deposit via wire transfer, a request for a deposit before viewing the apartment, etc. Many of the victims find that the apartments do exist, but they are not for lease - the "landlord" copies the pictures and information from real estate listings. I wasn't a user of Gawker, but last week my Yahoo email was compromised. Then, even though the login info was different for my online banking, my checking account was too. Per the bank rep, this is even more common during the holidays. Didn't think I had many access points online, until I had to change everything. Ugh.
