I have this exact same house layout, only my place is smaller. Everything is identical -- placement of front door and hallway, windows, arched large doorway to the dining room, everything. I tried this layout and a few others, and finally settled on the one I have now, which feels MUCH more spacious (sofa and chairs facing each other, fireplace to the side). I agree about the backsplash -- we tiled our big kitchen backsplash with mexican talavero tiles for just a couple hundred dollars, and it made a huge impact. You could also trade out your drawer pulls and cabinet knobs for somethign colorful/funky, like glass, painted ceramic, or some antique/primitive metal ones.

i love the "polenta rancheros" recipe from Vegan Brunch-- here is one website with the recipe. sometimes we cheat on the sauce and use a good jarred salsa in place of all the veggies, and just season with spices: http://www.livestrong.com/recipes/polenta-rancheros/

Any chance BYO is an option? This would only work with a very casual, funky sort of wedding, and the couple would have to be ok with the inevitable aesthetic mish-mash, but it would certainly be green.

I've been to a beautiful, casual outdoor wedding where folks were asked to BYO cup, plate, and cutlery, and it worked fine. There were even cleaning stations set up afterward - a trash can to scrape trash, a giant bucket of warm soapy water for scrubbing, another bucket with clean(er) water for rinsing, and a pile of clean, dry towels to clean your gear afterward. You may need to buy/borrow 20-25 sets for guests who forget or can't bring, due to travel issues, etc.

I'm sure with some creativity, you could even make it stylish!
