I use this as a general rule of thumb when dealing with non-gluten flours:
1. For cookies, replace 1 cup of wheat flour with 7/8 cup sorghum flour + 1/8 cup coconut flour.
2. For Brownies, make it 3/4 cup sorghum flour + 1/4 cup coconut flour.

For amounts that are not an even 1 cup, eyeball it. More coconut flour will make the finished product more dense.

Sorghum has a sweet flavor to me, so I would use it primarily in spicy things (like gingerbread cookies, or spice brownies).

I use parchment paper to line the pan. When the cookies are done, I slide the paper off on to the cooling racks.

Here in Michigan, we have a surplus of cold air, so I just place the pans near my slightly opened door. They cool off very quickly - usually before the next batch is done in the oven.

My "must have" cookie this year is a modified version of the Chocolate Chip Oatmeal Cookies with Cherries & Pecans recipe from here <http://www.thekitchn.com/thekitchn/dessert/recipe-chocolate-chip-oatmeal-cookies-with-cherries-pecans-124638>

I de-gluten-ized it using gluten-free oats and oat flour, plus a little coconut flour. I eliminated the pecans and upped the cherries and chocolate chips (using the Ghirardelli 60% chips).

EVERYONE is asking for these for Christmas this year.

You need to match your meals to your activity level.

When I was losing weight, I did the "Eat breakfast like a king, eat lunch like a prince and eat dinner like a poor man". That matched my activity levels during the day.

Now, because my activity level is higher in the afternoon/evening, my meals end up being about equal.

I've been using an Aeropress for a few years now. It's quick and produces a very good cup of coffee.
It got even better when I got a reusable stainless steel filter for it.

A japanese rice cooker also works very nice. I usually use the timer function on mine to have my steel cut oats ready when I wake up, or get home from work.

I've tried these over the years and use them a lot to make even-sized cookies. The problem for me is that they wear out too fast (they are poorly designed for my use).
I found some on webstaurantstore.com that don't wear out nearly as fast.

My family has been doing this for decades now. Grandma would make cookies over the year as she felt good so that she would have plenty for Christmas.

I will get them into the freezer as soon as they are room temp after baking. They are stored air tight. I thaw them in air tight containers. So far, they have tasted as good as freshly made cookies.
