oh gosh this is an easy one. two things:

1. balsamic glaze - it's good on practically EVERYTHING. a dollop on top of cheese and crackers, a drizzle on pizza, fish, chicken, etc. buy two!

2. roasted coconut chips - holy hell these are addicting. i usually just shovel them from the bag to my mouth, but they're also a great addition to yogurt or granola. buy 28374023482038 bags.

I made this last night and am eating the leftovers now! Agree with @abmakulec that it could double as a breakfast casserole. You can definitely taste the eggs.

I subbed pancetta for the bacon, and used an 8x8 baking dish. The pancetta is pretty salty so I'd probably knock the extra salt back to 1/2 tsp next time. Maybe even less.

I've been practically living off of this turkey chili for the past few weeks. A big pot lasts about a week, and it's great over quinoa, a baked potato, or brown rice. Or just with tortilla chips for dipping!

My other go-to weeknight meal: saute peppers and onions till soft, add a little garlic, then add sliced chicken sausage. Aidells brand is gluten free, pre-cooked, and comes in a ton of different flavors. This is ALSO perfect over quinoa, a baked potato, or brown rice.

I'm with you Emma, I could eat roasted Brussels every night! Last week (before roasting) I tossed in a diced apple, sliced shallot and splash of apple cider vinegar on a whim. SO good!

I know it won't last nearly as long, but if I'm using parsley or cilantro for a recipe, I chop up the rest and store it in a zip-lock bag with a damp paper towel. I find that I use it WAY more often if it's ready to be sprinkled on top of whatever I'm making!

I think the easiest way to cook for two is not to use a recipe, per se - just techniques/flavor combos that I can size up or down.

Favorites lately: sauteed chicken sausage with peppers and onions, served over quinoa or a baked potato; veggie stir fry over quinoa
