@queenofthefall. Creamy Mascarpone cheese would be an awesome substitution to the ricotta. It's the Italian version of cream cheese. Sweeten it the same way as the ricotta and enjoy! - R

Substitute any nuts you like for the recipe. If you do use hazelnuts, I suggest toasting them in the oven for 5 -7 minutes then rubbing them vigorously with a towel to remove the skins. Allow to cool completely then grind (grinding warm with create a paste).

For the clementine, I peeled it first, then juiced half of the peeled clementine. No need to use the actual fruit in the syrup (the other half is a great snack however!)

My apologies and thank you for pointing that exclusion out! Just a 1 1/2 Tablespoons of pumpkin puree should be added to the frosting, although I've also made it without and it's equally delicious!

Simply whip all the ingredients together until you form soft peaks. No change for dried cranberries, although your crumble will be less juicy. That said, with fresh in season I really suggest them, they meld with the apples to create this amazing "jam." Thanks and enjoy!

This recipe actually does yield a less-sweet quick bread. Although I wouldn't call it savory, it's definitely less saccharine than your typical banana bread. Enjoy!
