My husband keeps bringing home rhubarb and begging me to make apple rhubarb pie. Normally I'd prefer strawberry rhubarb, but tried it with apple recently and he loved it. I am going to attempt a gluten free crust this time.

I will never give up on cookbooks! I also need a break from reading a screen all day. I was skeptical about reading books on a Kindle for that reason, but got one anyway, and learned I was right about that. But it's still a nice thing to have so you never run out of things to read. The thing about recipes on the internet vs cookbook is the cookbook is more trustworthy. You have a more reliable "expert" who has created and tested the recipes. On the internet, unless a recipe is really well-reviewed or written by a real chef, it's more likely to be a dud.

Lately I've tried dealing with the mail immediately. Either get rid of it, file it (or put in a place in the office area to be filed), and pay the bills when you get them. It actually relieves stress to not have the bills sitting in a basket waiting to get paid.

Vitamins are our weak spot for counter clutter. And tea, because we drink about 8 different kinds, and it all comes in different shapes and sizes. I need a better system for both of those.

I'm never without tortillas—to make leftover chicken or meat more fun with rice, beans and whatever toppings. Plus a small package of corn tortillas are about the cheapest thing on the shelf at the market.
I would say any kind of cheese.
Boxed chicken broth - to make leftovers into a quick soup.

Back on the curd train. Last weekend I tried blackberry curd, and it's almost gone already. I still have enough frozen berries left for at least a single batch, but if I can I'm making a double batch. Then I might need to make some gluten free crepes. I tried a recipe a couple weeks ago for crepes using brown rice flour, and they were delicious.

Reporting back to say those flour less peanut butter cookies are amazing! I saved a little dough at the end and added some brown rice flour so I could do a taste test, and they're actually good both ways. But the flourless ones are magic because you can't tell there's no flour. They feel a little heavy on your stomach afterwards, but that's probably because I ate too many.

I was just bemoaning the lack of cookies in my house, so this post couldn't be better timed. Thank you all! I think I'm going to try the no-flour peanut butter cookies. I've gotten close to making them before, but ended up adding a little flour because I was so skeptical they would turn out tasting enough like cookies. I'm going to stick to the recipe this time.

Made lemon curd from our Meyer lemons, with the recipe from Alice Waters' Art of Simple Cooking. It turned out great. I doubled the recipe so had lots of extra egg whites, so made citrus tuiles to go with. First time trying those, and I used a recipe off the web (just searching for how to use up egg whites), and they were super easy and tasty. I thought they'd be crispy though, and they're not, so I'm not sure if I did something wrong. Husband is still requesting more though, so I guess I did okay.
