A sauce, like pesto or chimichurri, is the best thing because it keeps and it's great to have the freshness of herbs for a whole week. I used The Kitchn's chimichurri recipe twice in the past month and found myself putting it on everything. Ideas for Using Up Leftover Cilantro? Good Questions |

Nori wraps! Some people call them nori burritos. They're really just handrolls with whatever you want to put in them, but they're great for quick lunches and on-the-go sandwiches. I eat them at least once during the work week for lunch if not more. My favorite filling is avocado, daikon, lettuce, sesame seeds and some kind of spread (usually tamari+tahini). I think "bacon" - vegan or real deal - needs to be used as a garnish/condiment no matter what, making this indeed a healthier option. It doesn't matter whether it has nitrates or not, it is less "carginogenic" because it is plant-based. Other interesting vegan takes on bacon included tempeh bacon and shiitake bacon, the latter being the most whole-food approach. But as someone with an appreciation for the plant-based diet, I am looking forward to trying this! Crunchy, Smoky...Vegan?! Coconut Bacon Fettle Vegan |

People get so fired up about eating less meat. And I really don't understand the emotional attachment some people have to it or why the thought of eating less of it is so controversial. I eat a lot of vegetables, ie a "mostly vegan diet," just because I like vegetables. Those who don't, well they just don't know what they're missing. Mark Bittman Says: Eat More Plants |
