My absolute favorite is: first you take two slices of rustic rosemary sourdough bread, spread some homemade kalamata olive tapenade on one side of both slices, then on one slice put a couple of slices fresh vine ripened tomato on top of the tapenade, then put a couple of basil leaves, and then top with a couple of slices of fresh buffalo mozzarella, put the other tapenade covered slice of bread on top of the mozzarella. Light coat both slices of bread with a little olive oil and "panini" it for a few minutes until golden brown, crusty and oozing tasty melted cheese.
