I've had good results with coconut oil as well, but once when I blind-baked a pie crust, it splattered all over my oven (because there were a few visible coconut oil flakes and I hadn't melted the coconut oil before using. Well, I learnt from that to always melt before using. Isn't that so?

Here's a recipe for Spelt Hand Pies with a tender coconut oil crust

Are there any new updates on the BPA situation or do all the canned tomato companies continue as always? I really miss canned tomatoes, since I heard about BPA, I stopped using them, but tetra-pack tomatoes just don't taste as good

As a vegetarian, I sprinkle a tablespoon of flax powder daily in my oatmeal (after the oatmeal is cooked) in order to get my omega-3.

Can you shed light on flax seeds' heating point? I heard that flax oil, for example, should not be exposed to any heating, and wonder if that is the case for the powder as well?

Also, it seems that whole flax seeds don't release their nutrients, so one should always think about grinding it in a coffee grinder or buy the oil.

I love spelt flour. I make Indian flatbread -- chapati with it, use it in a pie crust, empanadas, and even these goey fudgy jaggery cookies:

quiche crust:

I also use spelt for making sourdough. I think we eat too much wheat (baked goods, pasta, bread) and this is a great alternative.
