I'm doing homemade caramels this year, with the salted caramels recipe and gift packaging ideas posted here. :)

Meghann--do you use the vinegar and hydrogen peroxide full strength for this? Or dilute it?

I like this idea, because I don't have a dishwasher and would rather not use a bleach solution, but I'm wary of putting plastics in the microwave...

I don't know, I tried the LiveStrong calorie calculator and food long thing, and it only gave me 1400 calories a day--I was STARVING all the time. All it did was make me crazy. Rather than count calories, I'm focusing on eating a healthy, mostly vegan diet with lots of whole grains and fruits and veggies, and minimally processed foods. I eat when I'm hungry and stop eating when I'm not hungry anymore. It works for me.

I'll put in another plug for canning. :) It's a really fun, involved activity that gives me the same satisfaction as baking, anyway. And you can experiment with low-sugar recipes, or can your own tomato sauce...the possibilities are endless!

Just curious--what kinds of things do you use nutritional yeast for? I just got some to use in homemade seitan, but I have no idea what else to do with it!

Probably my most frequently used spices are cinnamon, ginger, cumin, chili powder (I'm addicted to ancho chili powder at the moment), and oregano and dried basil (for when I don't have fresh around).

Another option for portioning without using so many plastic bags is to freeze portions in a muffin tin, then move the portions to a single large plastic bag or container for storage.

I'd also be interested in freezer-friendly vegetarian/vegan meals.

That sounds awesome! Would this work as a way to use some mandarins that I let sit in the fridge too long and that got kind of dried out? Because I have some of those.

Jodi, can you keep a plate and bowl and set of silverware of your own at work in your desk? That way you can carry food back and forth in a tiffin (which is lightweight and seals tightly) and then have something reusable on which to heat your food.

I've been slowly replacing my cheap tupperware with glass and bpa-free plastics. I'm doing a lot of saving of glass jam and peanut butter jars, which works nicely for storage of smaller amounts of rice, etc. What I'm wondering is, what are some good plastic alternatives for freezing? I like to cook in larger amounts and freeze leftovers, but I worry about putting glass in the freezer. I've been using my older tupperwares, since I reheat the food on the stove and not the microwave, but eventually would like to get rid of those containers altogether. Thoughts?

I usually plan 2-3 meals for the week that I'll cook in larger quantities and have for multiple meals, and/or put some aside to put in the freezer (thought that's probably not a concern for you). Usually a meat and potatoes dish, something with pasta, and something lighter, like soup and salad. Then I just plan to have simple things for the remaining meals--eggs and toast, bagel and cream cheese and fruit, cheese and crackers, etc. Good luck!

I don't cook for my cat, but I switched last year to an "all-natural" food that's corn-free and has meat as its main ingredient (as opposed to meat by-products or corn or another grain). I feel much better feeding that to him, and since he's been eating that he doesn't have as many hairballs and his coat is way softer, too.

Trail mix is great and can easily be an on-the-go lunch. I've done a lot of camping and we usually have trail mix and cheese and crackers for lunch--maybe try some corn or sesame crackers? I'm sure there are gluten-free ones around.
