Started a small fire last summer when I made hot pepper jelly. Made it in a too-small pot and when I added the sugar, the whole thing boiled up and over the sides almost immediately, causing a small fire on the burner. Luckily I had the lid to my big canning pot handy, so that saved the day. That was my only real fire, but I've had a few more close calls.

Needless to say, there is always a fire extinguisher handy in the kitchen now!

Oh my goodness, mango salsa. I must try that. I ended up purchasing a pineapple sage plant on the weekend as well, and figured that even if I never used it in anything it would still make my kitchen smell delicious... but mango salsa would be amazing. I hear it's also tasty in a pineapple upside-down cake (along with, y'know, real pineapple) but have not tested this.

Yes, worth it. We got ours new and still only paid about $40 and use it all the time. Homemade beef jerky (Alton Brown's marinade is awesome) is great, but I've also done dried ginger (if your piece of ginger is going a little south, slice it up and dry it, you can keep it in slices or pulse it through a grinder to get ground ginger), dried orange and lemon slices for homemade air freshener, "sun"-dried cherry tomatoes, dried chili peppers, all sorts of stuff. It's also a great way to preserve what you've grown in your own garden.

It's not in constant rotation, but constant enough that it never gets put very far out of reach.

Take a trip to the thrift store and look for secondhand Mason jars or latch-lid jars (probably not what they're actually called but I'm blanking completely). They're even less expensive than buying new and with a good wash they're perfectly fine for dry goods. You can often find bigger jars and canisters, and interesting colours/patterns at a thrift store, too.

I second the suggestion of writing on the side of the jar with a Sharpie. It works beautifully and still looks quite sharp if you write neatly.

One tip though - get those jars into your pantry, and get the things that are in bags into jars. I always feel more disorganized if my bulk food is still in the bag it came in. Heavier/larger jars should go on the floor of the pantry or on the lowest shelf. Smaller jars go on upper shelves with the lightest items in the center and the heaviest next to the walls.

If you buy spices in bulk, look into magnetic spice jars to stick right on your fridge. They can also be written on with a Sharpie!

Also - flour should be placed in the freezer for 1-2 weeks to kill potential bugs (gross, but best to have them dead), and nuts should always be kept in the freezer to prevent them from going rancid. :)

Interesting! I've been looking for a solution for my own media cabinet, which is really just a small bookshelf, sadly without doors. It's a wonder that there isn't more written on this site about it, I imagine lots of other people have dealt with the same issue.
