If you want to try creamy polenta before you dive into the homemade version (it is super easy) chunk up the roll, warm up in the microwave, then beat with beaters and milk/cream until the lumps are gone. It will give you a good idea of the consistency to shoot for when making it from scratch.

I great way of preventing this problem is to put a little water in the glass before you put the candle in. Then the wax sets once it hits the water not the glass.

I make pizzas and naan all the time from cold dough and truthfully find it easier to work with it when it is cold (less sticky.) The key to getting it thin and even is to do it is stages. Take the lump out and with a fair amount of flour and a rolling pin roll it just a bit to get it started, to about 1/2 to 3/4" thickness, let it sit for 3 minutes and shrink back a little. Then hit it again, roll it as far as you can then let it sit. One more time and you will have it, I perfectly even dough that is cold not sticky and ready in under 10 minutes.

Homemade only makes it taste better but they both cook up about the same. As said before a little cornmeal on the bottom of the dough helps get it back off but put this on just before it goes in.

Also you can use the same dough for "naan" just a bit different in the heat of he stone and techique.

Another idea: keep with the traditional feel of the kitchen. I like modern but putting ultra modern hardware on super traditional cabinets just looks stupied and naive. Play off the strengths of the room, heavy cabinets warm finish, I think the more you run with what you have the better it will look.

I too had the same cabinets and decided not to paint them. We fixed ours up by adding a 6 inch oak crown molding along the top and then rope light it to give a soft ambiance. (Super easy and cheap.)

I too would get rid of the wavy wood panel above your sink and the curtains. I think a upholstered cornice board would give it a cleaner look without breaking that line.

I would steam and fry them before I left. Bring them over in trays wrapped in foil and sprayed with oil. Then pop them in the oven, they will be like new!

The caterer I work with does this all the time and they turn out great.
