Actually I've seen and done a few rooms in red and green. When a client asks for those colors - Xmas is always my first thought and we talk about it. There are tons of fabrics today with a red and green theme which don't bring to mind Xmas. However it's not usually the berry red's and kelly green's of the holiday. Slipcovers are an awesome fix to update a perfectly good although ugly piece of furniture. However, as someone previously noted - store bought slipcovers aren't so great. They never end up looking as wonderful as one hopes. Custom slipcovers aren't cheap but they are often less $$ than buying a whole new sofa or chair.
