Great post on an often misunderstood dish! The only change in my own kitchen is that I don't use four whole eggs. For four people I'll use 3 yolks, plus one whole egg. I find that the whites tend to make the dish a bit 'slimy', and was given this tip by a restaurant here in Rome. Also, NEVER add cream. Marcella Hazan, more than any other. But the original, two volume paperback editions which I bought when I moved to Florence in 1988. Those and all of Evan Kleimans books, but mostly Cucina Rustica, which is a stand by. What's Your Favorite Italian Cookbook? |
