Well, I never went to school for this, but I have been making caramel for about 40 years and for myself, I only use wooden spoons for caramel or any confection for that matter.

The two spoons I use, both with 3 foot handles, have actually become hardened from being in hot caramel, fudge, butterscotch etc.

You do have to be more careful cleaning them, because they are porous, but remember, the Carmel is at a temp that will kill most food germs.
