Definitely abalone. It's grey, but has a rich enough color palette to pick up changes in light color and quality. The others are too blue.

We have those same cabinets, same color countertop. Not fond of them, but they are in very good shape, and I would feel wasteful to not use them. Our plan is to paint them a warm medium gray, using an adhesive primer, and swap out the hardware. Beware of white: it will make your countertops look hopelessly dirty.

Removing the popcorn ceiling is a great idea. The popcorn delaminates with moisture and has no place in a kitchen. That will free up those couple inches above you cabinets for flat storage, without leaving little balls of asbestos on your stuff.
