Don't laugh, but I have sent Omaha Steaks orders to friends long-distance in similar situations. There are a lot of meals to choose from, the prices are reasonable and they're really easy to heat up.

I think you're taking it too seriously, although if it really is that offensive, you can skip it. I understand why you might not want to go to a traditional shower for a second (or third) child, because you'd assume the parents already have what they need for a baby. But this couple is actually saying they don't want people to feel obligated to bring gifts at all, to bring diapers instead. I think that's a great compromise.
You can bring Seventh Generation if disposables offend you (although we tried them and hated them) or just bring the Pampers and feel good that you are helping to make a friend's life a little easier.

I loved sledding growing up and now, living in Florida, I want to love this idea. But I think by the time I arrived wherever I would sled (and it's fairly flat here but say I found a hill), I'd already be melted. :-(

Congratulations! We are also in a small house with limited storage space and our relatives have been fairly respectful of that (although my baby is 15 months now so I'm a little worried people might want to get him bigger stuff now).
I just remind relatives that we don't have much room and then suggest a few things that he would really like so they can pick. And books are fantastic alternatives!
That said, I would still feel like I should "pretend to be grateful" if they went another direction, because they are spending their money and ultimately there's only so much you can control that.

I am researching convertible car seats right now and these two came highly recommended -- the Britax Blvd and the First Years True Fit (way cheaper but heavier). I just have to see which fits best in our car.

As for stroller, we have the Combi Cosmo and love it. We also have a Maclaren Volo but it doesn't recline. I think the Triumph (the next price point up) does.
