i wish there was a bigger font i could write in to say YOU WILL NEVER MAKE HEALTHY FOOD IN A MICROWAVE, vegan or otherwise. it's not particularly new information but it seems to be taking long in catching on.
please don't get me wrong and take this for crazy talk, i'm trying to give advice that is constructive. i think your university is not looking after your health if it provides you with this equipment, and what use is going through university to just be burned out at the end (or even during) from eating crap food, that either cooks in a microwave or only requires hot water to be stirred in.
i'd unplg the microwave, and live on chopped salads and anything else you can imagine making without nuking. i think the advice on the rice cooker or crockpot is good.

otherwise i'd just get a blender, and pack a huge amount of nutrition into a drink. then eat out in good quality vegan places when you need to eat something different

this recipe is my staple satisfying snack, anyone i have recommended this to has become addicted.
first mash up a ripe avocado, add 1 or 2 tablespoons of tahini, half a tsp cumin, some chopped fresh tomatoes and spring onion, himalayan rock salt, ground pepper, some chopped fresh chili to your taste. eat wrapped in lettuce leaves.
i imagine this would be good on hot toast or pitta breads too, but i can't say for sure.

i'm not a fan of food and electricity in close proximity and always dreamed of a marble slab in a cool pantry to keep fresh food at a steady temperature...however! i've been without a fridge for 4 months and it's no use. i find my salads and greens turn to water far too fast, and mostly go uneaten.

the post where greens were stored in water like cut flowers made me hopeful though, thanks! also the portable herb garden!!! nice
