What a great idea. We have special corks saved with dates and occasion of the bottle - they are on display in a favorite vase. But we have an even bigger collection of "plain" ones. I love the concept of things like this, but I usually find that most people end up enjoying the party, wedding, etc. too much to take the time to write something in the guest book or on a wishing tree. One thing that I have done is mail out a "wishes" card with the invite. Then the guests can mail them back with their RSVP or bring them to the party!
